In honor of National Nutrition Month, we’re highlighting the important work of dietary services staff at California Health Care Facility (CHCF) in Stockton.
Registered Dietitian Nutritionists (RDNs) Sandra Guzman and Nathaniel McKee improve the health of incarcerated individuals through personalized nutrition care. Meanwhile, Food Administrator Michael Hansen ensures meals meet specific dietary requirements. Together, they make a lasting impact on the health and well-being of those they serve.
Guzman finds fulfillment in her role, helping individuals recover and manage health conditions.
“The population here is really appreciative of the help that’s provided,” she said.

Nutrition is key to improving overall health
Guzman’s daily work involves assessing the nutritional needs of incarcerated individuals and creating customized meal plans.
“My job is to make sure everyone gets the right nutrition,” she added. “This includes suggesting healthier meal options and recommending nutritional supplements.”
McKee works to empower incarcerated individuals to make better food choices that improve their long-term health.
“It’s rewarding when someone tells me they feel better after making simple changes, like choosing fruit instead of processed snacks,” McKee said.
McKee helps individuals understand how food choices affect their overall health. The team encourages them to adopt sustainable habits that last beyond their time at CHCF.
Hansen ensures meals are tailored to health needs.
“We make sure every meal is prepared safely with the right nutrients to support our patients’ health goals,” Hansen shared.
This National Nutrition Month, we celebrate dietary services teams across our institution. They are dedicated to improving health, one meal at a time.
